The Six Uncorked – A Wonderful Night in Nature

 




It was Saturday, and The Six Uncorked were meeting again for our monthly wine adventure. George was waiting for a WhatsApp message with the location and the time. As always, the organizer keeps everything secret until the last moment. Every time, the place is a surprise for the other six wine lovers. It can be a cozy house, a nice restaurant, or sometimes something totally unexpected. That is part of the fun, we never know what is waiting for us.

At six o’clock in the evening, the message finally arrived.

“This time,” it said, “the dinner is one hour from Barcelona, in a small town surrounded by nature. See you soon!”

We smiled when we read it. A night far from the city noise sounded perfect. After a busy week, we all needed some peace and calm. The road took us through green hills and olive trees. When we arrived, we saw a beautiful house with lights on the terrace, a soft breeze in the air, and the smell of the countryside all around us. It was a magical place, simple, natural, and full of charm.

Inside, John was already busy in the kitchen. He had prepared a wonderful menu for the night. The table was ready with candles, flowers, and elegant wine glasses waiting for us. The atmosphere was warm and friendly, full of laughter and good music. We knew it was going to be a special evening.

The starters were amazing. First, a selection of cheeses from different countries and styles; soft, strong, creamy, and aged. John explained each one while we tasted them slowly. Then came a beautiful salad made with Raf tomatoes and cod fish marinated in Xató sauce, a traditional recipe from Catalonia. The combination of flavors was fresh and full of personality.

Next, we enjoyed grilled fresh calamari with a light green sauce. It was tender and delicious, with the perfect balance between sea and herbs. Every dish told a little story, made with love and attention.

The main course was a sirloin steak served with a rich mushroom sauce and grilled vegetables marinated in the best olive oil from Spain. The aroma filled the house, and everyone was silent for a moment, that special silence when something tastes truly good.

Finally came dessert: a selection of fine chocolates and a panettone with walnuts. Sweet, soft, and perfect to end the meal.

Of course, The Seven Uncorked never meet without wine. Each member: Laia, John, Gina, Robert, George, and Emma, brought a bottle to share. On the table, we had red, white, rosé, and sparkling wines. Each bottle had a story, a place, and a memory behind it.

We travelled through flavors and regions:

D.O. Alicante and D.O. Costers de Segre, with their warm Mediterranean character.

D.O.Ca. Rioja and D.O.Ca. Priorat, full of structure and tradition.

A.O.C. Alsace, elegant and aromatic.

Corpinnat and A.O.C. Champagne, bringing bubbles, joy, and celebration.

Every sip brought a new conversation, a new smile. We compared aromas, shared opinions, and learned from each other. That is what makes our group so special, everyone has a different taste and experience, but we all share the same passion for wine, food, and friendship.

After dinner, we went outside to the terrace. The night was clear, full of stars. The sound of nature was all around us crickets, the wind in the trees, a dog barking in the distance. We opened one last bottle of sparkling wine and made a toast:

“To friendship, to wine, and to life!”

We talked about our first meeting years ago, and how The Six Uncorked has become part of our lives. Every dinner is more than just food and wine it is about connection, laughter, and discovering something new together.

As the night went on, we felt peaceful and happy. George was already thinking about the next surprise dinner. Where would it be next time? Nobody knows  and that is exactly what makes it exciting.

It was a wonderful night, one to remember.

Good food, great wines, and even better friends.
